4 lbs. jumbo shrimp in shell (21-25 count per pound) peeled & deveined, leave tail intact
1 cup Two Fat Guys Spicy BBQ sauce
3 tbsp vegetable oil
1tsp kosher salt
Pat shrimp dry, brush with vegetable oil, sprinkle evenly with salt. Marinate in refrigerator for 15 - 30 minutes.
Thread 6 shrimp onto each skewer, leaving no space between shrimp (through top and tail, leaving shrimp curled)
Heat grill to medium-hot charcoal (medium-high for gas). Lightly oil grill rack.
Shrimp will grill for a total of 4-6 minutes. Place skewered shrimp onto grill, lightly brush with bbq sauce and heat 2-3 minutes. Turn, then lightly brush again with bbq sauce. Grill additional 2-3 minutes. Watch shrimp closely to prevent over cooking.
Perfectly cooked shrimp are those that have just curled into a C-shape. Shrimp
that have twisted into an O-shape are terribly, overcooked.
If using wooden skewers, soak in water for 30 minutes to prevent them from
burning while on grill.
