Pat scallops dry with paper towel - get as dry as possible otherwise the scallops will steam rather than develop a beautiful brown crust.
Heat oil in pan - till shimmering and just starting to smoke.
Place scallops into pan leaving enough room in between so they do not steam.
Cook for 2 minutes - do not move them during this time in order for the beautiful crust to develope.
Turn scallops over and add butter to the pan, let them cook another 2 or 3 minutes while basting with butter.
Top with TFG Vinaigrette for a deliciously rich treat!

1 lb. large sea scallops
1 tbsp extra virgin olive oil
2 tbsp butter
1/2 cup oil
3 tbls TWO FAT GUYS BBQ Mild Sauce *
3-4 tbls of red or white wine vinegar
1 tbls finely chopped shallots
1/4 tsp basil
1/4 tsp marjoram or oregano
1/4 tsp thyme
3/4 tsp salt
1/4 tsp freshly ground black pepper
Combine all ingredients, let sit for 5 minutes.
